CUTTING THE CURD

Once the coagulation process is complete, the curd must be separated from the watery serum trapped inside. This step is called draining and is facilitated by the cheesemaker, who uses tools to break up the curd. For hard cheeses, the curd is broken into very small granules (for more drainage), while the production of soft cheeses involves breaking the curd into larger pieces.
